Belangrijk : sommige vruchten bevatten uit zichzelf veel pectine, andere niet. Veel: appels, citrusvruchten, kweeperen, pruimen, rode (aal)bessen, zwarte bessen, stekelbessen (kruisbessen).. Middelmatig ; bosbessen, veenbessen, abrikozen. Gedroogde abrikozen verdikken soms zeer goed! Weinig : aardbeien, ananas, druiven, kersen, krieken, kiwi, vijgen, perziken, peren, frambozen, bramen. Wat er vroeger veel gebeurde, voor men weet had van de bindende werking van pectine, men liet de confituur koken tot die soms veranderde in karamel.. Dikwijls in Frankrijk gezien bij oude dametjes die donkerbruine, tot karamel gekookte, aardbeienconfituur in hun schapraai staan hadden. Sinds vele jaren hebben fabrikanten zich op de zaak gestort en produceerden toen . Dat is suiker gemengd met pectine. Naarmate de Amerikaanse en de Europese bevolking altijd maar dikker en dikker werd, (omdat zij geen poot meer verzetten) werd suiker de boosdoener, want van suiker wordt men dik.. Juist, maar van vet wordt men nog veel vetter! Weg met de suiker !!! Daarom hebben de fabrikanten een trucje ontdekt en produceerden een confituursuiker waarvan men maar de helft nodig heeft. Daarvan wordt men dus maar beetje dik. Maar toen kwam er een ander probleem aan het licht.. De confituur die gemaakt werd met zo weinig suiker kon niet bewaard worden, die begon na een tijdje te gisten of te beschimmelen. Oplossing; een bewaarmiddel bij de confituursuiker voegen.. Gelukkig gebruiken de fabrikanten een vrij onschuldig bewaarmiddel ; sorbinezuur.. Dit conserveermiddel werkt alleen maar in een vrij zuur milieu..! Nog een reden waarom een confituur, zuur moet bevatten. Misschien proef je geen zuur.. Dus wat doet de fabrikant van confituursuiker? Hij voegt citroenzuur bij zijn confituursuiker.. Met een beetje geluk kan men nu zonder al te veel problemen confituur bereiden met weinig suiker, die mooi dik wordt en die zelfs bewaart voor een lange tijd.. Een jaar zou het product toch moeten goed blijven buiten de koelkast. Nu zijn er natuurlijk slimmeriken die confituur willen maken zonder suiker, met stevia of andere kunstmatige rommel..- Heel simpel; dat kan niet! Suiker is een bewaarmiddel. In een sterke suikerconcentratie kunnen bacteri! Wil je toch iets eten dat op confituur gelijkt, maar zonder suiker, noem het dan . Maar ook hier, indien er onvoldoende 'echte' suiker aanwezig is zal je bekomen product niet lang bewaren! Het soort suiker dat je gebruikt doet er niet toe. Witte kristalsuiker, bruine suiker, rietsuiker, glucose, honing, al deze producten zijn een vorm van koolhydraat en de bewarende werking ervan in confituur blijft hetzelfde! Dat trucje zal natuurlijk wel werken maar in hoeverre agar bestand is tegen lange bewaring, dat weet ik niet. Nog iets dat ik eens zal moeten uitvissen. Om het probleem met de vraag, hoeveel pectine moet ik nu juist gebruiken, op te lossen, heb ik mij reeds sinds lang, pectine in poedervorm aangeschaft.. Met de hoeveelheid die ik heb, ben ik nog wel een jaartje of twee zoet. Het is pectine van het type: Pectin Amid AF 0. Want als je dacht dat er maar ! Je kan ook PEC of Marmello kopen en dan moet je de instructies van de fabrikant volgen. Volgens de fabrikant wiens pectine gebruik, is 7 gram pectine nodig voor een kilo afgewerkte confituur. Maar ik pas dit gewicht aan naargelang het gebruikte soort vruchten.. Het recept is dan ; - Vruchten, al dan niet in stukjes gesneden, eventueel water, tot een gewicht van 7. Suiker 3. 00 gram gemengd met het pectinepoeder.- E. Dit is voldoende voor 2 standaardbokaaltjes confituur. En je hebt nog een kliekje over voor onmiddellijk gebruik. Terwijl de confituur bezig is met aan de kook te komen zet ik de bokaaltjes plus de deksels in en pot met water en breng ze aan de kook. Het overgebleven kokend water kan dienen om de afwas doen!!! Vruchten die wat langer moeten koken om gaar te worden, kook je eerst zonder suiker of pectine toevoeging tot ze voldoende mals zijn. Succes altijd gegarandeerd.. Indien echt nodig verwijder dan het schuim dat zich vormt aan het oppervlak van de confituur. Schroef de deksels onmiddellijk op de bokalen. De potjes omdraaien om ze te laten afkoelen doe ik al lang niet meer. De confituur kruipt dan tussen de randen van het deksel en de bokaal en je krijgt nadien het bokaaltje niet meer open tenzij met destructieve kracht.. Tip !- Om de confituur zeker goed te laten opstijven voeg je helemaal op het einde van de kooktijd een mespunt citroenzuur toe! Er zal zich een soort rimpelig vlies vormen aan het oppervlak als je dat even beroert met je lepel..- Haal de lepel uit de confituur, wacht dertig seconden en trek met je vinger een streep op de lepel.. Als de streep perfect zichtbaar blijft is je confituur OK.- Ik zie het aan de ! Want pectine en calcium reageren op mekaar. Ik had rabarberconfituur gemaakt, altijd een risico, omdat rabarber enorm veel vocht bevat.. Maar alles ging goed en toen heb ik als test een koffielepeltje . Later heb ik het nog eens herhaald met kastanjeconfituur. Dan het bekomen vocht zeven en laten uitdampen.. Het witte poeder dat dan overblijft is calciumcitraat. Ook te koop bij de apotheker.. Iemand heeft mij vijgen (diepvries) beloofd.. Dan kan ik nogmaals controleren wat er exact gebeurt met de calcium toevoeging. En dan zal ik ook een portie maken met agar agar als bindmiddel en controleren of die binding lang intact blijft..
